Basically, the way your profile name is displayed is connected to your profile on Starbucks.com. I was unable to change my display name on that end too, and the best advice I can offer you is to contact the HelpDesk through that site. I work with the folks who manage the Community Site and unfortunately they don't have the access to the Starbucks.com system to help you with this. I'm working with the site administrators to fix the issue. Even when you do log your hours, the project will always be marked "You Are Leading This Project" to you since you're the leader.
